  • Uses: This knife combines the strength of a "deba" knife, specialized for filleting fish, with the convenience of an "all-purpose knife" that can also cut meat and vegetables. The blade is 4mm thick, making it reliable enough to cut through tough fish bones, yet its easy-to-handle 120mm size and double-edged finish make it a versatile kitchen knife with great maneuverability.
  • Material (Hybrid): The core material is "Yasugi Steel Aogami No. 2," which maintains a sharp edge for a long time. It is a hard steel, yet tenacious, and even if the blade becomes slightly dull, it still has the characteristic of "soft cutting," meaning it can cut into food. By sandwiching this steel between rust-resistant "stainless steel," the knife maintains professional-grade sharpness while being significantly easier to maintain.
  • Maker and design: Each knife is hand-forged by the artisans of Fukube Blacksmithing, a company with over 100 years of history in Noto. The handle is made of natural Zelkova wood, which has beautiful grain and is highly durable, and the more you use it, the more it will fit your hand.
