- Handle: This premium handle was crafted by master custom knife maker Keido Sugihara. It's made from a rare wood called desert ironwood, also known as the "jewel of the desert." This semi-fossilized wood is highly resistant to water and corrosion, and its amber luster, which deepens with age, will enrich the soul of anyone who owns it.
- Size and Use: With a blade length of 180mm, the Gyuto knife is a versatile size that can be used in much the same way as a regular Santoku knife (165mm-180mm). Because the tip is sharper than a Santoku, it's easy to perform detailed tasks like slicing meat or decoratively cutting vegetables, and is extremely easy to handle even in a small kitchen.
