  • Use: A specialized knife for vegetable preparation, such as slicing cabbage into thin strips or slicing radishes into rounds. In addition to its easy-to-handle size of 160mm, the Grand Chef series' unique "incredible lightness" minimizes strain on the wrist when chopping.
  • Material: We use "Böller Uddeholm special steel (Swedish steel)," which is said to be the world's best stainless steel. Because it contains very few impurities, it has a sharp cutting edge that approaches that of carbon steel (hagane) and is also rust-resistant, despite being stainless steel.
  • Design and Function: The blade is beautifully engraved with the auspicious pattern "Seigaiha," which represents waves spreading out endlessly. This groove creates a layer of air between the blade and the ingredients, preventing cut cucumbers and radishes from sticking to the blade, making for an incredibly smooth cutting experience.
  • Handle: The handle is lightweight and highly water-resistant. Despite its Japanese knife style, it offers the light handling of a Western knife and blends beautifully into modern kitchens.
