- Maker: Saruwatari Toshiaki, a professional swordsmith from Seki City, Gifu Prefecture, known as the town of blades, crafts the Enun series from Saruwatari. These authentic kitchen knives exude a unique, dignified aura, projecting the skill and spirit of a swordsmith into a modern kitchen knife.
- Material: The core is made of "SPG2 (Super Gold 2)." This is the pinnacle of powder high-speed steel, boasting incredible hardness and surprisingly long-lasting sharpness. As it is stainless steel, it is also resistant to rust and is easy to clean after cutting fatty meat.
- Blade: While most regular sujihiki knives are thin and flexible, this knife has a thick blade with a thickness of 3mm. It has the rigidity of a Japanese sword with reduced flexibility, and by taking advantage of its weight and ability to cut straight through large blocks of meat or saku, it can cut straight through without wobbling. The "Flame Cloud" pattern floating on the long blade is a spectacular sight.
- Handle: Made of durable and water-resistant compressed plywood (gray). The chic gray color gives it a modern look, and the well-balanced design allows for firm control of the heavy blade.
- Uses: The 210mm blade length is the perfect size for cutting roast beef or sashimi. The long blade length allows for a "hiki-kiri" (pulling cut) technique, which allows for a single cut without moving the blade multiple times, resulting in a beautiful cross section that retains the juices and flavor of the meat.
