【Pure Sharpness to Deepen Your Craft】Tsukiyama Yoshitaka Whetstone: Kensho Akatsuki #3000
Usage (Medium-Finishing Stone #3000): The next generation of medium-finishing stones, reached through the exhaustive refinement of the previous "Tsugu/Naru" series. The #3000 grit plays a vital role in efficiently removing scratches left by coarse or medium sharpening, creating the essential foundation for a truly sharp edge. Pursuing the "precise and swift performance" expected of a synthetic stone, this single pillar can complete a practical, high-performance edge on its own, while also quickly preparing the "perfect surface" to transition into the ultra-finishing stages.
Material & Method (Domestic High-Purity Abrasives / Resinoid Method): Excluding natural stone powders, this stone is forged solely from domestic high-purity abrasives using the resinoid (low-temperature firing) method. This pure, impurity-free structure achieves a smoother sharpening feel and an overwhelming improvement in sharpness compared to previous models. Characterized by its distinct green hue, this stone possesses the ideal cushioning unique to low-temperature firing, providing a comfortable, "magnetic" sharpening experience across all types of knives—from hard steels to tenacious cladding materials.
Sharpening Feel (Operability and Expression): Sharpening immediately after flattening, working with a developed slurry, or sharpening under running water—the stone’s character shifts freely according to the sharpener's technique. Because it creates extremely shallow and uniform scratches, it minimizes unevenness. It achieves a high-level balance between the "precision" of a synthetic stone and the "delicate feedback" that responds to the sharpener's intent.
Finish (Edge Precision): By pushing the purity of the abrasives to the limit, this stone forms an exceptionally sharp and well-aligned edge. Despite being a medium-finishing stone, it leaves behind incredibly shallow scratch marks, leading the blade toward an immediately practical sharpness and maximizing the benefits of any subsequent ultra-finishing or natural stones. The generous dimensions of 205×75×25mm provide outstanding stability, handling any knife without stress.
"Infusing the sharpener’s will into the edge." "Akatsuki," which draws out the full potential of high-purity abrasives, is a tool that offers new discoveries with every use. For the cook or sharpener who trusts in the potential of a single blade and aims for even greater heights, this is a masterpiece of Tsukiyama Yoshitaka’s pride.
